The only way to learn to race is by racing
Everything about racing will be foreign to new dogs. The preparation, the trip in the van , car or trailer, the individual tracks, the vetting and kennelling procedures and the actual act of racing against other dogs.
Depending on the personality, the on track experience and the aptitude of the dog, the racing will either come naturally or the dog will require some time to learn the necessary race craft.
All greyhounds are very much individuals with their own particular skills and characteristics, so it is foolhardy to expect them to develop at the same rate and be uniform in their behaviour.
Some dogs win first up and pick things up instinctively, some take time to learn the ropes and then blossom in wonderful racers, while others will never be super competitive and just enjoy the chase and going for a run with their mates.

For every trainer and owner it is about getting the dog to fulfill its full potential and having a happy career. Whether that is winning group races, winning a maiden, picking up the occasional place or becoming the best pet possible...they are all winners.
